Something that would make a far bigger impact in reducing carbon emissions, preserving fresh water sources, and reducing soil erosion is eating significantly less industrially farmed meat. Even cutting meat out one day a week has the same impact as eating entirely locally, all the time. But switching to a less meat-based diet is probably something most people don't want to consider.
